Mill Iron 4 is a tribute to Dustin's grandfather Marty, who registered the Mill Iron 4 brand for his cattle ranch in Wyoming back in 1947. His dad Dean was a championship bareback bronc rider out West. Dustin grew up in South Carolina learning barbecue, and now he's bringing both of those things together here in Louisville.

Dustin started building relationships with ranchers and realized most restaurants only want the glamour cuts, leaving ranchers stuck trying to sell the rest. At Mill Iron 4, he's buying whole animals from six to ten ranchers he knows personally, breaking them down in-house using European seam butchery, and dry aging the beef. It's harder work, but it supports the ranchers doing it right and brings whole-animal butchery back to Louisville.

More than anything, Mill Iron 4 is a neighborhood restaurant where you can learn something about beef, have a great meal, sip rare bourbon, and then come back in soon.
